Chimichurri is a herby marinade or sauce that’s perfect for all sorts of meat.
(Chimichurri is an Argentine parsley-garlic marinade/sauce)
2/3 cup Peerless Formula 40 oil or SunOil
1/2 cup chopped parsley
1/2 cup chopped coriander
2 teaspoons crushed garlic
1 tablespoon chopped oregano
1/2 teaspoon paprika
1 teaspoon cayenne pepper
2 tablespoons red wine vinegar
Salt and freshly ground pepper
Place oil, parsley, coriander, oregano, garlic, paprika and cayenne in a processor and blend to a coarse puree. Add vinegar, salt and pepper to taste.
Goes with lamb, pork, chicken and seafood.
Marinade can be heated and used as a sauce or dressing.
